Glazed Eggplant Steaks

Meaty eggplant takes center stage in this main dish. Chili powder and paprika bring enough flavor to satisfy even the biggest carnivores.


  • 2 large eggplants
  • ½ cup olive oil
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ cup Nature’s Promise Organic Original Barbecue Sauce
  • 2 tbsp fresh parsley


  1. Set grill to medium. Cut the eggplant lengthwise into ¾-inch-thick slices. In a small bowl, combine the oil, chili powder, paprika, and garlic powder. Brush oil mixture all over eggplant slices and season with salt and pepper.
  2. Place eggplant on grill. Cover and cook 5 min. per side, until mostly tender. Brush tops with some of the barbecue sauce and turn eggplant slices over using a wide spatula. Brush other side with some of the barbecue sauce and grill 1 min. Turn eggplant slices over. Continue brushing and turning eggplants occasionally until very tender. Transfer to serving platter.
  3. Finely chop the parsley and sprinkle over eggplant steaks.
