Cherry Chipotle Pulled Pork Sandwiches

Ingredients

  • 1 (5 lb) pork shoulder roast (or Boston butt)
  • 1/2 cup brown ale (optional)
  • 1 cup ketchup
  • 1/2 cup cherry preserves
  • 2 tbsp light molasses
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 (12 oz) can chipotle in adobo, minced, plus 1 tablespoon adobo sauce
  • 1 tsp smoked paprika
  • 1 pack (8 each) Gameday Sandwich Rolls
  • Pickles, cabbage slaw or green apple slaw, for serving

Instructions

  1. Add all ingredients in 6 or 8-quart slow cooker.
  2. Brush pork with sauce to coat. Cover and cook on high for 5-6 hours, until pork is fork tender.
  3. Remove pork from slow cooker. Shred pork into bite-size pieces using forks and return to slow cooker. Toss to coat in sauce. Serve on Sandwich Rolls and top with your choice of pickles or slaw.
