With an origin stretching back over one hundred years, green tea ice cream has long been a favored dessert in Japan and other parts of Eastern Asia. The sticky-sweet treat, made with Pure Matcha powder, has recently made a splash in Western culture, too, and can now be found at your neighborhood grocery store in addition to local Japanese restaurants. That said, homemade green tea ice cream is incredibly easy to make and personalize at home. This recipe has only a handful of ingredients and doesn’t require an ice cream maker!
Ingredients
- 2 cups (16oz) heavy whipping cream
- 4 tbsp Pure Matcha
- 2 tbsp hot water
- 1 can (14oz) sweetened condensed milk (chilled)
- 2 tsp vanilla extract OR 1 tsp vanilla extract and 1 tsp almond extract
- Slivered almonds (optional)
- Other toppings as desired
Equipment
- Large mixing bowl (chilled)
- Electric or hand whisk
- Small mixing bowl
- Milk frother or fork
- Wooden spoon
- Freezer-durable container(s)
Instructions
- Pour heavy whipping cream into the large mixing bowl. Whip at medium speed until stiff peaks form. Set aside. Pro tip: Keeping your heavy whipping cream in the fridge until the moment you need it will yield a fluffier, heavier whip due to the solid fat particles in cold heavy cream. Chilling your mixing bowl ahead of time helps, too!
- In the small mixing bowl, mix hot water, Pure Matcha powder, and vanilla and almond extracts with a milk frother or fork. Your mixture should be smooth and free of lumps.
- Add chilled, sweetened condensed milk to the Matcha blend in the small mixing bowl and stir until well-combined and smooth.
- Spoon contents of the small mixing bowl into the whipped cream in the large mixing bowl. Gently fold until evenly combined, being careful not to flatten or over-stir the whipped cream.
- Scoop mixture into freezer-durable containers, smoothing contents with a spoon or spatula. Freeze for at least 6 hours.
- To serve, remove from freezer, scoop into a bowl and garnish with a dusting of matcha powder, a teaspoon of slivered almonds and your favorite ice cream toppings.
