Since you’re already spending time outside on your grill, why not add a dessert? There’s something about how the flames of a grill can turn any fruit into a caramelized, smoky treat. I recommend picking fruits like peaches, melons, pineapple, pears, bananas, and figs which will hold their shape while cooking. So just throw YOUR favorite on a hot grill and stand by while they develop gorgeous grill marks. You can do it plain, kabob style, over ice cream, or like I have, over crepes! And, since crepes are basically thin pancakes, this is one dessert that can be made for breakfast – just add Greek or Icelandic yogurt for some protein!
Ingredients
- 1 pineapple, peeled and cut into 8 wedges
- 1 cup all-purpose flour
- 2 eggs
- ½ cup milk
- ½ cup water
- ¼ tsp salt
- 2 tbsp butter
- ½ cup honey
- ½ tsp ground cinnamon
Instructions
- In a large bowl, mix flour and eggs.
- Gradually whisk in milk and water.
- Add salt and butter and beat until smooth.
- Heat a lightly oiled frying pan.
- Pour in 1/4 cup batter and swirl to coat the pan evenly.
- Cook about 2 minutes on each side and serve warm.
- Top with grilled fruit, honey cinnamon drizzle.
- Whipped cream optional.
