Classic taco seasoning and the smoke of the grill infuse these meaty mushrooms with loads of flavor for easy vegetarian tacos, done in just 15 minutes.
Ingredients
- 3 tbsp ground cumin
- 1 ½ tbsp ancho chile powder
- 1 ½ tbsp granulated garlic
- 1 tbsp onion powder
- 1 tbsp dried oregano
- 2 tsp sweet paprika
- 1 ½ tsp salt
- 1 tsp sugar
- ¾ cup olive oil
- 3 (6 oz) pkgs portabella mushroom caps
- Fajita-size flour tortillas, shredded cheese, salsa, guacamole, for serving
Instructions
- Set grill to medium. In a medium bowl, stir together the cumin, chile powder, granulated garlic, onion powder, oregano, paprika, salt, and sugar.
- To bowl with seasoning mix, stir in the oil until well combined. Generously rub mushrooms all over with seasoning oil.
- Cover and grill mushrooms 4–5 min. per side, until tender, occasionally brushing with any leftover seasoning oil. Transfer to a cutting board and thinly slice. Serve with tortillas, cheese, salsa, and guacamole.
