Turkey Chili with Coca-Cola® and Brown Rice

Ingredients

  • Vegetable oil As needed
  • Ground Turkey 1 lb.
  • Yellow onion, diced 1 each
  • Garlic, minced 3 cloves
  • Salt To taste
  • Pepper To taste
  • Cumin 1 1/2 tsp.
  • Chili powder 1 tsp.
  • Cayenne 1/2 tsp.
  • Diced tomatoes 1, 28 oz. can
  • Kidney beans, drained, rinsed 2, 15 oz. cans
  • Brown rice 3/4 cup
  • Coca-Cola® 2 cups
  • Chicken stock 3 cups
  • Light sour cream As needed
  • Cheddar cheese, shredded As needed

Instructions

  1. In a large pan over medium-high heat, add vegetable oil. Add ground turkey, onion, and garlic. Season with salt and pepper and cook until turkey is browned.
  2. Combine cooked turkey with remaining ingredients in a crock pot and cook on low for 6-8 hours, or high for 2-4 hours. Serve 1 1/2 cups per person with sour cream and shredded cheese.
